Your data, kept small.
We are a two-person workshop. We collect as little as we can, we never sell it, and you can ask us to delete it at any time.

Who we are
Grilled in Texas is a small workshop in Fort Worth, Texas, run by Ana & Lucas Carmona. This policy covers this website and the emails we send from it. “We” and “us” mean Grilled in Texas.
What we collect
If you join the newsletter
Your email address, plus the dates you signed up, confirmed and (if it happens) unsubscribed. Nothing else — no name, no location, no profile.
We use it only to send the newsletter: a few emails a year about new batches, new woods and open production slots. We do not track whether you open our emails or click their links.
When you visit the site
Like any website, the servers that deliver the pages receive your IP address and basic browser information (browser type, the page requested). We use it only to deliver the site, keep it secure and block abuse — for example, limiting how many sign-ups can come from one address in an hour. We do not use it to identify you.
If you email us
Your email address and whatever you choose to write. We use it only to answer you.
What we do not do
- We do not sell or share personal information, for money or for advertising.
- No analytics, advertising pixels or social media trackers on this site.
- The site itself sets no cookies.
- No third party collects information about your browsing on this site across other websites over time.
Services that help us run the site
A few providers handle data for us, only to provide their service:
- Hostinger — hosts the website and our email mailbox. Newsletter and confirmation emails are sent through it.
- Sanity — our content system. It stores the newsletter list, with every address encrypted, and serves the photos on the site.
- Google Fonts — delivers the typefaces, so your browser contacts Google’s servers when a page loads.
We may also disclose information if the law requires it.
How long we keep it
- Newsletter addresses: until you ask us to delete them. When you unsubscribe we stop emailing you right away and keep the encrypted address marked as unsubscribed — unless you ask us to erase it completely.
- Sign-ups that are never confirmed receive no emails.
- The sign-up limits described above live in server memory and are cleared when the server restarts.
Your choices and rights
- Unsubscribe with the link at the bottom of any newsletter, or the unsubscribe button in your email app. It takes effect immediately.
- See, correct or delete what we hold about you: email us from the address in question and we will do it, usually within a few days and always within 45 days.
These choices are open to everyone, wherever you live, and asking will never cost you anything or change how we treat you.
“Do Not Track” and Global Privacy Control
Since we do not track visitors across sites or sell or share personal information, there is nothing for these browser signals to switch off. They are respected by default.
Security
The site is served only over HTTPS. Newsletter addresses are stored encrypted, and the list can only be read with a key kept on our server. No system is perfect, but we keep what we hold to the minimum.
Children
This site is meant for adults. We do not knowingly collect information from children under 13. If you believe a child signed up, email us and we will delete it.
Changes to this policy
If we change this policy we will update it on this page and change the date at the top. If a change affects how we use newsletter addresses, we will tell subscribers by email before it applies.
